I started gardening a few years ago using a couple of pots, slowly It grew into a couple raised beds. 😅 It always amazes me how much I can harvest from a fairly small garden.

Za’atar & Veggies Kale Chips

2 large carrots
1 large bunch organic kale
1/2 cup cashews
1/4 cup olive oil
1 tsp garlic powder
2 tsp onion powder
2 tsp smoked paprika
2 tsp za’atar or other favorite spice blend
1/4 of a cup apple cider vinegar or lemon juice
1/4 nutritional yeast
1 tsp salt
2 Tbsp soy sauce
2 Tbsp honey or 4 dates

Dehydrator 140F to 150F for 12 to 20 hours OR for the oven at 176F/80C fan on for 4 to 5 hours or until super crunchy 😋

Kale quinoa salad

2 cups warm cooked quinoa, millet or rice
1 bunch of kale
1to 2 garlic cloves
3 tbsp apple cider vinegar
1 lemon
2 tbsp extra virgin olive oil
6 tbsp mixed sunflower seeds, pumpkin seeds or nuts of choice
3 tbsp. dried cranberries or raisins
Salt and pepper to taste

Potatoes & herbs

2 lbs. potatoes
6 garlic cloves 
2 tbsp extra virgin olive oil 
1 tbsp each: Fresh oregano, thyme, rosemary 
Salt, pepper to taste

Topping:
2 tbsp chopped fresh chives and parsley 

SAFFRON AIOLI

1/4 cup mayonnaise
1/4 cup Greek yogurt
2 cloves garlic
1/4 tsp saffron threads
1 tsp lemon juice 
1 tbsp extra virgin olive oil 
salt, pepper to taste
