ingredients
1 package lady fingers (savoiardi)
1/3 cup of sugar
1 tsp vanilla
1 cup of strong coffee (note original recipe calls for 1.5 cups but I found that I actually only needed less than a cup. I used instant espresso granules and for 1 cup used about 2 tbsp coffee)
1.5 cup cream
225g of mascarpone cheese
8 inch (20 cm container)
if you are going to do a piping design, I think you would need more cream mixture!
To the cream mixture I would increase the measurements by 1/3 cup cream and 50 g more mascarpone and 1.5 tbsp more sugar )

1. Cream, sugar and vanilla go into a bowl. Whisk till stiff peaks. This took me about 6 ish minutes on low -medium speed. Add mascarpone cheese and beat until incorporated (less than 30 seconds!). Set aside.
2. Add coffee to another bowl. Dip the lady fingers in. I like how the recipe states it so I will just put it in here “Don't soak them--just quickly dip them on both sides to get them wet” – do exactly that! And put them into the pan to form the first layer.
3. Smooth half of the cream mixture over the top and add another layer of dipped lady fingers.
4. Smooth remaining mascarpone on top and refrigerate. Needs at least 4 hours!
If you too are planning to make this a bit fancier and pipe the top ( I got this idea from Bromabakery!) . Instead of following the final step, smear a thin layer of cream mixture on top. Enough to just cover the biscuits (you will still see biscuits sticking out as it is a thin layer). Use the remaining cream mixture to pipe your design. Close knit bobbles are what we are after- they will look so cute – do better than I did :D
