KOYLA CHICKEN

Ingredients

Chicken 1 kg
Green chilies 6 julienne
Coriander leaves ½ cup chopped
Ginger garlic paste 2 tbsp
Tomatoes 6 blended
Cashew nuts roasted 10
Allspice powder 1 tsp
Red chili powder 2 tsp
Salt 1-½ tsp
Butter 4 ounce
Lemon juice 1 tbsp
Fresh cream ½ cup
Coal 1 large piece

METHOD

Marinate chicken with ginger garlic paste, allspice, chili powder and salt for 30 mins. Heat butter in a wok, add marinated chicken, cook for 2 mins, add green chilies julienne, sauté for 1 min, add blended tomatoes and ½ cup water, cover and cook for 15 mins, add grinded cashew nuts, mix, let it cook for 5 mins. Lastly add lemon juice, coriander leaves, cook for 5 mins till oil leaves the masala, add fresh cream, mix gently, remove, place burning coal and give dum, serve hot with nan or rice.

SINGAPOREAN RICE

Ingredients

Chicken boneless cubes ½ kg
Red chili powder ½ tsp
Red chili flakes ½ tsp
Chili garlic sauce 1 tbsp
Tomato paste ½ cup
Soy sauce 1 tbsp
Chili sauce 1 tbsp
Chicken powder 1tsp
Salt to taste
Ginger and garlic paste 1tbsp
Oil 2 tbsp

For The Vegetables

Cabbage ¼ cup
Capsicum ¼ cup
Carrot ¼ cup
Green onions ¼ cup
Red chili flakes a pinch
Soy sauce 1 tsp

For The Noodles

Spaghetti(boiled) ½ packet
Red chili flakes a pinch
Soy sauce 1 tsp
Butter 1 tbsp
Basmati rice (boiled) ½ kg


For The Sauce

Mayonnaise 1 cup
Red chili flakes 1tsp
Vinegar 1 tsp
Yellow color a pinch
Mustard paste 1 tsp
Chili garlic sauce 1 tbsp


For Garnishing

Garlic and green chilies fried as required

METHOD

Take 2 tbsp oil, ginger garlic sauté chicken with all ingredients cook till tender.
Boil spaghetti sauté with butter red chili flakes and soy sauce. Sauté veggies in butter red chili flakes and soy sauce.

For Layering
Rice, then sauce, spaghetti, veggies, gravy, at last garlic fried and chilies fried.
