Ingredients:
Chicken – 750 g (washed and cut into medium pieces)
Onions – 3 large (thinly sliced)
Tomatoes – 2 medium (finely chopped or pureed)
Ginger-Garlic Paste – 2 tbsp
Green Chilies – 3 (slit)
Curd (thick yogurt) – ½ cup
Fresh Coriander Leaves – ½ cup (chopped)
Fresh Mint Leaves – ¼ cup (chopped)
Lemon Juice – 1 tbsp
Oil – 4 tbsp
Ghee – 1 tbsp (optional for richness)
Whole Spices:
Bay Leaf – 1
Cloves – 4
Cardamom – 3
Cinnamon Stick – 1 inch
Black Peppercorns – 6–7
Shahi Jeera (caraway seeds) – ½ tsp
Spice Powders:
Turmeric Powder – ½ tsp
Red Chili Powder – 1 tsp (adjust to taste)
Coriander Powder – 1 ½ tsp
Garam Masala Powder – 1 tsp
Salt – as needed
Method:
Marinate Chicken
In a bowl, add chicken pieces, curd, turmeric, red chili powder, and a little salt.
Mix well, cover, and let it marinate for at least 30 minutes (1 hour is better).
Fry Onions
Heat oil in a heavy-bottom kadai.
Add whole spices (bay leaf, cloves, cardamom, cinnamon, pepper, shahi jeera).
Add sliced onions and fry until golden brown. (Keep some fried onions aside for garnish).
Cook Base Masala
Add ginger-garlic paste and slit green chilies, sauté until raw smell goes.
Add chopped tomatoes and cook till oil separates.
Add Chicken
Add marinated chicken with curd into the pan.
Stir well, cover, and cook on medium flame for 10–12 minutes until chicken is half done.
Add Herbs & Spices
Add coriander powder, remaining chili powder, salt, and mix.
Add chopped mint and coriander leaves, stir well.
Simmer Curry
Add about 1 cup of water (adjust for desired gravy).
Cover and let it simmer for 15–20 minutes until chicken is fully cooked and gravy thickens.
Finish
Sprinkle garam masala powder, fried onions, and lemon juice.
Mix gently and cook for 2 more minutes on low flame.
Garnish & Serve
Garnish with fresh coriander leaves.
Serve hot with steamed rice, biryani rice, roti, or naan.
