Espresso Rubbed Pork Loin with Chocolate Mole Sauce
Espresso Rub:
Ingredients:

2 tablespoons finely ground espresso coffee beans
1 tablespoon smoked paprika
1 tablespoon brown sugar
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional, for a bit of heat)
Instructions:

In a small bowl, combine all the ingredients until well mixed.
Rub the mixture all over the pork loin, pressing it into the meat.
Let the pork loin sit for at least 30 minutes to allow the flavors to penetrate. For best results, marinate in the refrigerator for a few hours or overnight.
Pork Loin:
Ingredients:

1 (2-3 pound) pork loin
2 tablespoons olive oil

Instructions:

Preheat your oven to 375°F (190°C).

2 cups chicken broth

Instructions:

In a large saucepan, heat the olive oil over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
