A look at the Curries kitchen section of Shiv Sagar restaurant in Leicester in which the Chefs gives us a very privileged insight into how they quickly cook up their delicious dishes to a packed and busy restaurant.

Whilst watching this video, you may be thinking that the curry section looks quite messy & untidy; on a busy service with a full restaurant & hungry customers eagerly wanting their food ASAP, then this is what restaurant kitchens look like. Also be aware that after the restaurant closes the staff will spend much time cleaning up the kitchen, that cleaning routine is one of the reasons that this restaurant has a 5 Star food & hygiene rating.

Notice how the chefs are so calm and keep their cool under such a fast paced environment.

Also, in the background, you can see the other colleagues working their magic at the Indo-Chinese section.

Note that; in Indian restaurants dishes are cooked on a very high heat which delivers a wonderful smokiness to the cooked food and gives that distinctive restaurant flavour, taste and character to a dish which cannot be created in a home kitchen.

The secret of making those dishes ready so quickly is they already have the sauces, gravies, and boiled vegetables ready.

The guys were very busy at most times of my visit, and I didn't feel it appropriate or right to interrupt to ask what the dishes were being cooked.

As you know by now I love busy Desi places like this.

Shiv Sagar Restaurant is one of our favourite restaurants in Leicester. We always eat here whenever my family and I visit Leicester because we find that the food does not fail to deliver on the taste factor and the portion size of the food served up is very generous they serve up restaurant quality food at Indian Street Food prices.
