COFFEE BUNS
Chocolate Sponge Dough Ingredients:
Water 110 grams
Yeast 10 grams
Sugar 35 grams
Salt 7 grams
Milk 100 grams
All-purpose flour 350 grams
Butter 20 grams
Mocha Topping Ingredients:
Butter 60 grams
Sugar 60 grams
All-purpose flour 70 grams
Egg 1
Instant coffee 3 tsp
Water 2 tsp
Method:
Dissolve the yeast in milk and leave it for a while. In a bowl, add salt, flour, sugar, water, and the milk-yeast mixture, then knead well by hand. After that, add butter and knead again. Leave the dough to rise for 30–45 minutes. Now divide the dough into portions of 80–90 g each, place them on a tray, and leave them to rise again.
For the mocha topping, mix sugar and butter well. Then add the egg. Mix coffee with water, add it to the mixture, and finally add flour to make the topping. When the buns have risen, put the prepared topping into a piping bag and pipe it onto the buns. Bake well at 180°C for 12–15 minutes.

MARBLE BISCUITS

Ingredients
Icing sugar 87 grams
Butter 162 grams
Flour 250 grams
Egg 1
Salt a pinch
Vanilla powder a pinch
Cocoa powder 10 grams
Milk powder 20 grams

Method
Mix icing sugar and butter well with your hands
Now add the egg and mix thoroughly
Then add salt vanilla powder flour and milk powder and mix well
Take out a small portion of the mixture and add cocoa powder to it then mix
Cool the dough and cut the vanilla dough into roll shapes
Place the cocoa mixture step by step on top of it
Give it a nice marble look and keep it in the fridge
Finally bake at 160C for 20 minutes
