We've given our macaroni cheese recipe a healthy boost by adding vegetables.

Ingredients (serves 2)

1/2 cup macaroni
1 cup chopped broccoli
1 cup chopped cauliflower
1 tbsp oil
1 tbsp flour
1 cup milk
1/2 cup grated cheese
2 tbsp dry breadcrumbs

Method

1. Pre-heat oven to 180°C
2. Fill a large saucepan with water and bring to the boil
3. Add macaroni and boil for 7 minutes, stirring occasionally
4. Add broccoli and cauliflower and continue to cook for a further 3 minutes
5. Drain through a colander or sieve and set aside
6. Heat oil in saucepan and add flour
7. Stir and cook for approximately one minute
8. Gradually add milk in small amounts, mixing until smooth with each amount
9. Continue until all milk has been added
10. Return to a low heat and bring to a simmer, stirring often
11. Stir through grated cheese
12. Season with salt and pepper
13. Mix together the cooked macaroni, broccoli, cauliflower and cheese sauce
14. Spread mixture into a baking dish
15. Sprinkle with breadcrumbs
16. Bake in oven for approximately 20 minutes.
