3 eggs
100 g of sugar

85 g of flour

1. Divide the eggs into yolks and whites
2. Start whipping the whites with salt until light foam
3. Pour in half of the sugar and continue to beat until dense proteins at an above average speed (you can turn the plate over and check their stability)
4. Next, add the remaining sugar to the yolks and also beat until fluffy and light-colored yolks
5. Mix flour with starch
6. And sift half of the flour into a bowl with proteins, then without stirring add the yolks completely and add the remaining flour again with the last layer
7. We stir everything with careful up-down movements so as not to lose airiness
8. We put the dough in a pastry bag and then on parchment or silicone mat at a distance from each other, the cookies themselves should be about 1.5*10cm
9.Sprinkle with powdered sugar
10. Bake at 180°C for 10-12 minutes, until golden brown
11. We remove the cookies after they have completely cooled down

Mascarpone - 500 g
Large eggs - 4 pcs.
Sugar - 4 tablespoons
Espresso coffee - 150мл
Cocoa

1. Divide the eggs into yolks and whites.
2. Add one tablespoon of sugar to the yolks and beat until light and fluffy.
3. Mix mascarpone with beaten yolks. Optionally, you can add liqueur or Marsala wine. I added rum.
4. Beat egg whites with 3 tablespoons of sugar until stiff peaks form. Gently fold the beaten yolks into the yolk mascarpone, stirring with a spatula to keep the cream light.
5. Dip savoiardi cookies in coffee. Put in the form. Spread half of the cream, then another layer of cookies and again the cream.
6. Cover the form with cling film and refrigerate for at least 2 hours.
7. Sprinkle with cocoa before serving.
