This vegan vegetable kitchari or khichdi is soothing, delicious, and so so versatile. You can use any veggies that you have on hand and have a nourishing meal ready in 40 mins! Ingredients (all the veggies except ginger are totally optional)
1/2 cup split among dal
1/2 cup white basmati rice
1 zucchini cut into 0.5-inch semicircles
1 carrot cut into 0.5-inch circles
1.5 tbsp chopped ginger
a few cauliflower florets
a handful of green beans roughly chopped
1.5 cups baby spinach
1.5 - 2 tsp turmeric powder
1 tsp cumin seeds
2 cloves
1 cinnamon stick
1 bay leaf
1 tsp nigella seeds/kalonji (optional)
Salt to taste
