Instant Pot Creamy Mushroom Chicken

Similar to the last recipe that I prepared in a skillet, here's the Instant Pot version, just as absolicious!

In your Instant Pot liner add 1-2 C Chicken Stock (you can substitute water, vegetable stock or a mixture of chicken stock with dry white wine). Add 6-8 boneless skinless Chicken Thighs (you can substitute chicken breast(reduce your cooking time), beef cubes, lamb chops, tofu). 1 Onion chopped, 1 stalk Celery sliced (with leaves) and 1 Lb of sliced Mushrooms (any kind you like). Season with salt and pepper and a dash of Maggi. Add 1 Can baby peas. (Frozen are also good)

Cook 20-30 minutes until the chicken is cooked though.

You can thicken this sauce if you wish with some corn starch slurry.

Serve on rice, pasta or in some puff pastry shells as the previous recipe.
