One of the quickest, tastiest ways to use a LOT of cherry tomatoes: Roasted Cherry Tomatoes with garden fresh Herbs

At the end of the season, I'm always faced with a ton of cherry tomatoes to use before the frost hits. Roasted cherry tomatoes with herbs is one of my favorite ways to preserve those delicious little bites of summer!

Roasted Cherry Tomatoes with Herbs

6-8 cups cherry tomatoes, halved
1-2 cloves garlic, chopped
¼ c olive oil
Herbs- fresh or dried (I use a mix of basil, rosemary, thyme, parsley, oregano)
Salt, to taste

Halve tomatoes, place in a glass casserole dish
Chop garlic and fresh herbs (if using), dump on top of tomatoes
Sprinkle dried herbs (if using) and salt over tomato/garlic mix
Pour olive oil over tomatoes
Stir to coat
Place in a preheated 350°F oven for 40 minutes, stirring occasionally. If, at the end of 40 minutes, most of the liquid has not cooked off, put back in the oven for increments of 10 more minutes, or until desired consistency is reached.
