Braised Fish 红烧鱼尾. Pan frying the fish is always a great way to further enhance the aroma of the dish, then only u braise the fish.

Ingredients:
1 snapper fish tail (marinate with some salt and give it a few slits on the fish body)
Few slices of ginger
3 cloves of garlic
1 bowl of chicken stock
Some fresh chili slices (keep some for garnishing)
Some chopped spring onion and fresh corianders (to garnish)

Seasonings:
1 round of light soy sauce
1 round of dark soy sauce
1 round of Shao Hsing cooking wine
Few drops of Ong Ky premium fish sauce
Pinch of salt
Pinch of sugar
1 tablespoon of oyster sauce

Add a few dashes of white pepper before serving, yum ~
