Keto Pumpkin Coffee Cake

Pre-Heat oven at 350 Oil your 9 by 9-inch pan

Bottom Layer

2 cups of fine almond flour
¾ cups of keto friendly sweetener (put two tablespoons back in the bag)
1 tablespoon keto friendly brown sweetener
1 pinch of salt
¼ teaspoon of cinnamon
1/8 teaspoon of cardamom
1 teaspoon baking powder
2 eggs
½ teaspoon of baking soda
½ cup of sour cream
1 tablespoon of almond or vanilla extract
2 tablespoons of coconut or olive oil

Pumpkin Cream Cheese Center

1 package of cream cheese
Vanilla extract
¼ cup of keto friendly sweetener
1tablespoon of keto friendly brown sweetener
¼ cup of canned pumpkin
¼ teaspoon of pumpkin spice
¼ teaspoon of cinnamon

Crumble Top

1 cup of almond flour
4 tablespoons of butter
1 teaspoon of cinnamon
1/8 teaspoon of cardamom
½ cup of keto friendly sweetener
1 tablespoon of brown keto friendly sweetener
Pinch of salt

Directions:
1. Mix all bottom ingredients well and place in your 9 by 9-inch pan
2. Mix the pumpkin cheese middle and place on top of the bottom
3. Mix the crumble topping and place on top
4. Bake for 35 to 40 minutes on 350
5. Take out of over, let cool, and enjoy
