You know I love a good shortcut, and this Lamington Cake ticks all the boxes! Instead of faffing about with individual squares, this is one big, soft, jam-filled beauty topped with rich chocolate icing and coconut. All the lamington flavour you love, with half the effort. Perfect for birthdays, afternoon tea, or just because you feel like a slice of Aussie classic! 🇦🇺💖

What you NEED
1 vanilla cake mix (made per packet instructions)
½ cup jam
2 cups icing sugar
¼ cup cocoa
50g soft butter
4 tbsp milk
¼ cup desiccated coconut

What you DO
Mix up your cake box according to the packet.
Pour half the batter into a lined cake pan.
Warm your jam in the microwave for 30 seconds, then gently spread over the batter.
Top with the remaining cake mix and bake as per packet instructions.
For the icing, stir together icing sugar, cocoa, butter and milk until thick and smooth.
Once your cake is cool, spread the icing over the top and sprinkle generously with coconut.

Slice it up, serve with a cuppa, and enjoy the easiest lamington cake ever! 😍☕
