3kgs Biryani Rice
200 gms Matar
4-5 Carrot
50 Gms Beans
1/2 Cauliflower
1 Potato
3 Green Chillies
2 Inch Ginger
1 Onion
1 Tbsp Desi For Cooking
1 Tbsp Desi Ghee For cooking veggies
1 Tbsp Desi Ghee For Rice
3.5 Cups Water
1 Tbsp Salt
Coriander Leafs
Nut Meg Powder


WHOLE SPICE
2 Bay Leaf
1/2 Cinnamon
3 - 4 Elachi
1 Badi Elachi
1/2 tsp Black Pepper Corns
5 - 6 Cloves
1 tsp Cumin Seeds
1 Mace / Javitri

For Smoke
1 Cinnamon
1 tsp Desi Ghee

Method:
• Wash Daawat pulav Basmati rice really good and soak it in enough water for about 30 minutes.
• Heat up oil in a cooker and add cumin seeds, cinnamon, black cardamom, black peppercorns,
cloves, bay leaves and star anise.
• Fry it for few seconds.
• Add onion and fry well until it gets light golden color.
• When onion begins to get light golden color, add ginger-garlic paste and green chilies and fry
together for just about a minute.
• Add cauliflower, carrot, potato, French beans, fresh peas and sweet corn and fry well.
• Add cashew nuts and raisins and mix well.
• Drain all the water from soaked rice and add it into the cooker.
• Mix everything well together and add water and salt.
• Add ghee and close the lid.
• Adding ghee is optional. You can skip it if you don’t want.
• Cook on high heat until 1 whistle. Veg pulav is ready.
• Serve it with raita.
• If you are going to serve it as rice dish with main course then it is sufficient for 10 people and if
you are going to serve only pulav then it is sufficient for 5 people.
