ഷവായ also known as rotisserie chicken, has always been my favorite. However, a recent trend in Kerala of covering Shawaya in masala has emerged, and I’m not a fan. I’ve always loved it for the rich flavor of slowly cooked meat with its own juices. Unfortunately, many places rush the process, resulting in burnt skin and undercooked meat inside.
