Recipe
Ingredients
*For Crab Cakes*
*Prep Day Before Cooking*
1 lb Crabmeat, lump
2 slices bacon, cooked and crumbled
1 medium onion, chopped fine
1 stalk celery, chopped fine
1/2 green pepper, chopped fine
1 teaspoon Old Bay Seasoning
1 teaspoon Tabasco sauce
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon deli mustard
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
*Mix Day of Cooking*
1/2 cup quality mayonnaise
1 egg, slightly beaten
1 stick butter, unsalted
2 tablespoons fine bread crumbs
2 tablespoons lemon juice
*For Shrimp*
1lb 16/20 ct fresh shrimp, deveined and butterflied (U15 shrimp)
old bay seasoning
Directions
*For the Crabmeat*
Render bacon in skillet
In same skillet with bacon fat, Sautee onions, celery and green pepper.
Set bacon and vegetables aside to cool.
Mix crabmeat with all ingredients except (bread crumbs, mayonnaise and egg), chill over night
2 hours prior to cooking, add mayonnaise and egg allow mixture to merry, place in fridge to keep cold.
Roll into 1”balls, flatten to 1/2" to 3/4" thickness and roll in bread crumbs
*For Shrimp*
Peel and de-vain shrimp.
Cutback about ¼“ way through
Use two fingers on each end pop the shrimp open into butterfly shape
Clean out shrimp
Plaice crabmeat call slightly flattened on back of butterflied shrimp with tail pointing up
Fold tail over and press tail into crabmeat
Add 1 oz butter on top of each shrimp
*Cooking Options*
*For Oven*
Bake in oven at 350° for 15 minutes
*For Grill*
Use Seafood trey or lined sheet pan
Place shrimp on trey or sheet pan
Smoke or grill for 10-15 minutes
Remove to platter with absorbent paper and keep warm while cooking the remaining stuffed shrimp
Serve with lemon wedge, Charlie's favorite tartar sauce , Big Jim's coleslaw and hushpuppies
