Amaretti/almond cookies
Recipe
5 egg whites
4 ½ a 5 cups Almond flour
1 ½ cups sugar
½ tsp.vanilla extract
1-2 tsp almond extract
1 tbs. Olive oil
For dipping
½ cup sugar
½ cup of powdered sugar

First beat egg whites adding about 1 tsp. Salt till firm,seat aside
Next sift your sugar with the almond flour in a large bowl, add to this the egg whites folding ⅓ at a time, add your vanilla,almond extract
You should get a firm mix, depending on your eggs if you use medium 4 ½ cups will firm up if you use a large egg white you will need 5 cups

At this time scoop with a small ice cream scoop or a ball of 2” , roll it first in the sugar gently, place in the powdered sugar, then to your parchment lined pan

Bake at 325 degrees for about 18 to 20 min. For a soft inside cookie
For a more crunchy go 18 to 25 .
