Here's a montage of all of the gestures that Sonic (and, in the 360/PS3 version, Chip) go through for each rank in Sonic Unleashed. Between the two versions, what they do is different; I'll go through the Wii version first, then the 360 version.

The Wii version goes from the S-Rank down to the C-Rank. It's actually very easy to deliberately get these ranks; the day stages' ranks are completely based on time and you're told the time you need to clear the stage for each rank. The night stages are a bit harder, but they also tell you the criteria at the end. Two of them, the elapsed time and number of Rings, have counters. The third, experience points, can usually be met by defeating every enemy and breaking everything that's breakable, or failed by defeating as few enemies as possible and breaking as little as possible.

The 360 version is a LOT harder to deliberately attain ranks. The main reason is because the time bonus, which counts the largest portion of your score, is hidden from you. That goes for both the formula, which is different for each stage, and also your numerical time bonus you receive, which must be determined in the day stages by subtracting the Ring bonus, the Speed bonus, the Enemy bonus, and the Tricks bonus from the total score. What counts as each rank is also different. It could be as little as 50,000 points or as much as 250,000.

The Werehog stages were even harder: It sounds paradoxical, but the time bonus here is the most important part of your score, but at the same time the least important. It takes up by far the largest proportion of your total score at the end, but it's incredibly generous. For the regular Werehog stages, in order to completely deplete the time bonus, you need to spend about an hour at the stage. When playing through a Werehog stage, you don't need to concern yourself with the elapsed time at all.

That's why I picked the boss stages for the lowest ranks: Sonic still does the same things and says the same stuff, but the cutoff point for depleting the time bonus is a lot smaller. It's still ridiculously long sometimes though.
