This Banoffee Birthday Cake is made with a delicious dulce de leche filling! Each of its components can be found in the original Banoffee Pie but in a slightly different form! The delicious caramelized bananas add depth to this amazing birthday cake. This cake includes the Graham crust as well. So fans of the famous pie will be pleased, but even if you've never heard of it, the flavor combination will captivate your tastebuds.

Ingredients
2x Genoise ( 6")
300g Dulce De Leche
450ml Whipping cream
30g Sugar
5ml Vanilla extract
100g Graham crumbs
3x ripe bananas
30g butter
15g brown sugar

Instruction

Step 1 - Caramelized Bananas
1. Take some bananas and cut them into slices
2. Melt the butter in a pan and add the brown sugar
3. Once it has turned into a caramel add your banana slices
4. Both sides should be caramelized
5. Allow them to cool & save them for later

Step 2 - The Genoise
1. We are using two Genoises for this recipe
2. Combine the eggs, the sugar and vanilla extract
3. Barely mix in the butter inside and sift the flour over the mix
4. Fold in the flour and pour into a 6-inch cake mold
5. Preheat oven to 350°F and bake for 20-25 minutes
6. Cut it in half & set aside

Step 3 - Chantilly Cream
1. Whip the cream with the vanilla and sugar in a mixing bowl
2. Stop mixing when the peaks are stiff
3. Half is saved for later, while the other half is mixed with graham crumbs

Step 4 - The Assembly
1. Fill a piping bag with your graham chantilly cream
2. Pipe evenly on your genoise
3. Make the border thicker
4. Spread a thin layer of dulce de leche on top and smooth it out
5. Gently, place your caramelized bananas on the dulce de leche
6. Add another layer of genoise on top of it
7. Repeat the same steps - Graham Whipped Cream - Dulce De Leche - Bananas - Genoise

Step 5 - The Decoration
1. Scrape off the excess
2. Fill a second piping bag with whip cream
3. Pipe from the bottom to the top
4. Add some more on top and smooth it out
5. Try to even everything out using a scraper
6. Cover the cake's foundation with shredded chocolate or graham crumbs
7. With a piping bag and an open star piping nozzle, pipe some whipped decoration
8. At this point you can decorate as you like!
9. Slice the cake and eat it :P
