Here's a perfect mix of tradition and creativity with purple sweet potato 餅 bǐng or chinese pastry. Made with sweetened sweet potato dough, these pastry have a creamy coconut custard filling that’s delicious with a cup of hot tea.

Ingredients:

Preheat oven : 190C/ 375F

🍠Sweet Potato Dough:
•Water dough / outer dough
-400 grams Cake flour
-1 Egg
-125 grams Canola oil
-100 grams Sugar
-100 grams Water
-20 grams Glucose or corn syrup

•Oil dough / inner dough
-200 grams Cake flour
-80 grams Canola oil

🍠Custard Filling:
-40 grams Coconut flour
-8 Eggs
-500 ml Milk
-80 grams Sugar
-2 teaspoons Vanilla Extract
-1/4 teaspoon Salt
-30 grams Cornstarch
-30 grams Butter

Baking time:. 15-17minutes or light brown at the bottoms
