#MalaiSoyaBiryani - Try this different Biryani for a change 👍🏻 You can make it as a one pot meal in pressure cooker too. In case you are making it in cooker, wash and soak rice in water along with all the whole spices for 15 mins. Wanted to show this method for those who do not have a cooker. Hope it is helpful. Tastes yummy both ways. You can also use Soya Chaap instead of the nuggets. If you liked the video, do share it and try the recipe 👍🏻

Malai Soya Biryani by Masterchefmom
Ingredients:
1/2 cup Soya Nuggets ( to be soaked in hot water for 10 mins, rinse with room temp water and squeeze out the excess water)
For marination:

To grind:
1 large onion
1/2” ginger
2-3 green chillies
10-12 cashew nuts
Pudina/ coriander leaves( optional)
For marination( at least 10-15 mins):
Ground masala
1/4 cup thick curd
2 tsp cream
salt to taste

To fry:
1-2 tbsp ghee
1 tbsp ginger garlic paste or
1/2” ginger( grated)
3-4 garlic cloves( grated)
1 large onion( sliced)

For flavouring the rice:
2 bay leaves
2 cloves
2 green cardamom
1” cinnamon stick
1 tsp ghee
Finely chopped fresh herbs of your choice

1 cup rice ( Note : adjust water depending upon how you plan to cook rice. If cooking in open pot method, add 1/2 cup extra water and drain excess water once the rice is cooked)

Step 1: Grind without adding any water onion, cashew nuts, ginger ,green chill and coriander leaves(optional) to a paste.
Step 2: Add soya chunks to hot water and allow it to soak for 10 minutes.
Step 3: squeeze out the excess water, rinse in cold water and squeeze out the excess water again.
Step 4: Add the ground mix, curd, cream , salt , pudina/coriander leaves ( optional)and allow it to marinate for 10 mins.
Step 4: Heat kadai with ghee, add ginger, garlic, onions and fry them well. Add the marinated soya mixture , black pepper powder, garam masala and let it cook for 10 minutes on low flame. Add extra 1-2 tsp cream ( optional)
Step5: Simultaneously, cook basmati rice in an open pot ( 1:3) Flavour the rice with whole spices.
Step 6: Add the cooked rice to the malai soya mix, and garnish with more herbs.
Step 7: switch off the gas and cover the pot with a heavy lid . Open after 15 mins
