Nothing beats making this recipe right at home! I’d even go as far as saying that it tastes better than Chipotle’s. The key to delicious and flavorful cilantro lime rice is to cook the rice perfectly, use fresh cilantro and lime juice, and season the rice while it’s still steaming. Ingredients:
-3 cups of uncooked white rice
-4 fresh limes
-one bunch of finely chopped cilantro
-salt to taste
-3 tbs oil (vegetable, avocado, olive, etc.)

Instructions:
-wash the uncooked white rice with cold water until the water runs nearly clear
-for the finger method, touch the tip of your middle finger to the top of the rice and add enough water until it comes up to the first crease -otherwise, you can follow package or online instructions on how to properly cook rice
-as the rice cooks in the rice cooker or stove top, prepare the other ingredients
-once the rice is cooked, immediately fluff it with a rice paddle and transfer it to a large mixing bowl
-add about 3 tbs of neutral oil, juice from two limes, half of your cilantro, and 2 tsp of salt; give it a thorough yet gentle mix
-taste the rice with a clean spoon and adjust the flavors accordingly
-taste the rice again with a clean spoon and adjust if needed
-enjoy!
