INGREDIENTS
Kulcha Dough:
1/2 Cup Warm Milk (120ml)
1 Tsp Sugar (4g)
2 & 1/2 Cup All Purpose Flour/Maida (300g)
1/2 Tsp Baking Soda (5g)
3/4 Tsp Baking Powder (3g)
1/4 Tsp Salt (1g)
1/4 Cup Yogurt/Dahi (60ml)
2 Tbsp Oil (30ml)
1/2 Cup Water (120ml)

To prepare Kulcha:
Nigella Seeds/Kalonji (as needed)
Fresh Coriander (as needed)
1 Tsp Ghee (for 1 Kulcha) (5ml)
1 Tsp Water (for 1 Kulcha) (5ml)

METHOD
Mix warm milk and sugar until sugar gets dissolved.
⁠Take all purpose flour in a large bowl. Add baking powder, soda and salt. Mix till everything is well combined.
⁠Now add milk, yogurt, oil and water. Knead the dough well for 10-15 minutes manually or for 5 minutes if using stand mixer or electric beater with dough hook attachment. The dough will be sticky. Add oil to handle the dough easily if it sticks to hands. Cover and set aside for 30 minutes.
⁠Divide the dough into 6 equal sized portions.
⁠Take one portion, add nigella seeds and coriander. Roll with a rolling pin or flatten with fingers.
⁠Heat a fry pan and add ghee. Place the kulcha. Keep the flame medium to high and cook for 2 minutes. You will now see bubbles. Lower the flame. Add 1 tsp water and immediately cover the pan. Cook for 2 minutes at low flame. Remove the lid and add ghee. Flip and cook on the other side.
⁠Same way, prepare all the other kulchas.
⁠Serve with chhole or matar and enjoy!
