Pasties of meat, potatoes, carrots, onions, and rutabaga are the signature cuisine of the Copper Country in Michigan's Upper Peninsula. The classic "Yooper" Pasty was taken down into the copper mines by Finnish immigrant miners. This recipe was handed down through three generations and is as authentic (and tested) as you can get. The crust is made of bread flour and lard to ensure the pasty will stay together even when the lunch pail is kicked down a couple of levels in the mine.
