Making a loaf of white bread using Perry Smith breadmaker without eggs and milk recipe. With its dual blades, Pery Smith bread maker is easy to use in making bread dough and baking bread. Using short autolyse method of total 45 mins rest time in the fridge with TangZhong to make a soft and fluffy bread.

BREAD RECIPE
Flour/High Protien Bread Flour = 517 gm
Salt = 6 gm
Sugar = 25 gm
Cold Water = 220 gm
Cold Soft Butter = 28 gm
Instant yeast = 6 gm

TANGZHONG RECIPE AND COOKING METHOD
Flour = 33 gm (sifted)
Water = 165 gm

Mix flour and water till well combined. Cook on low-med heat. Once the batter starts to thicken but still watery, continue to stir and cook by removing the saucepan from the heat occasionally. Once it is thicken but not dry, then it is ready. Let it completely cool before use.

Methods and Preparation :
Measure out all ingredients. Make sure the bread machine and the pan is clean and mixing blades/paddles are in place and secured properly in the bread pan.

1. Sift bread flour, add in salt and sugar, mix till well combined.
2. Mix cooked Tangzhong with cold water, mix till well combined.
3. Pour Tangzhong water mixture into bread pan.
4. Add in bread flour mixture into bread pan that filled with Tangzhong water mixture.

First Kneading without yeast, Menu 11 (Rapid Kneading)
1. Select Menu No. 11, 1st knead for 30 mins.
2. Add soft cold butter when the shaggy dough started to form into a round shape dough, continue to knead till 30 mins kneading cycle is completed.

First Rest : Rest in the fridge for 15 mins (cover bread pan to avoid the dough drying)

Second Kneading without yeast, Menu 11 (Rapid Kneading)
1. After 1st Rest of 15 mins, select Menu No. 11 again, 2nd knead for another 20 mins.
(at the end of 20 mins, you can see the dough started to develop smooth and shiny texture)

Second Rest : Rest in the fridge again for 30 mins (cover bread pan to avoid the dough drying)

Menu 10 (Leavened Dough)
Once 2nd rest of 30 mins completed, Select Menu 10 (Leavened Dough) with preset time at 1 hour 50 mins. Add instant yeast once it's started kneading and allow it to continue kneading until its reaches RISE 3 function.

Pause Menu 10 To Pre Shape The Dough At RISE 3
Press the START/PAUSE/STOP button to PAUSE the RISE 3 at timer 0.50 to pre shape the dough, place it back into the bread maker and Un-Pause RISE 3 to continue proofing the dough. Proofing bread dough takes about 50 mins to complete.

Time To Bake The Bread
Once Menu 10 (Leavened Dough) is completed, Do Not remove the dough from bread pan and shaping the dough again is not required. You may immediately bake it by selecting Menu No. 14 (Bake), Color/Crust : Light, Time : 1 hour.

Let The Bread Cool
After 1 hour of baking, remove bread from the bread pan. Please allow it to cool completely before slicing the bread.

To Maintain Freshness
Store the sliced bread in an airtight container, consume the bread within 3 days as this bread recipe does not contain any preservative.
