Today we’re baking a bright, fragrant orange–rum cake that’s no sugar, no flour, gluten free, and lower carb. It’s friendly for blood sugar/insulin and can fit a gentle weight-loss diet when enjoyed mindfully — cozy flavor without the crash. 🍊✨

📌 Ingredients
zest of 2 oranges
⅓ cup sweetener (60 g) (erythritol/monk fruit or your favorite)
1 cup almond flour (100 g)
⅓ cup coconut flour (35 g)
4 Tbsp butter, melted (60 g)
1 Tbsp baking powder (7 g)
3 eggs
juice of ½ orange (≈40 ml)
1 Tbsp rum (15 ml)
optional: 2 Tbsp walnuts, crushed (≈30 g)
Soaking syrup
1 Tbsp sweetener (≈15 g)
2 Tbsp rum (30 ml)
juice of ½ orange (≈40 ml)
Glaze
1 Tbsp sweetener (15 g)
2 heaping Tbsp sour cream (40 g)
extra orange zest, to finish

👩‍🍳 Method:
Perfume the sweetener: mix orange zest + ⅓ cup sweetener in a bowl.
Dry mix: add almond flour, coconut flour, baking powder; whisk.
Wet mix: stir in melted butter, then eggs, then orange juice and 1 Tbsp rum. Fold in walnuts if using. Batter is thick.
Bake: spread into a pan, level, and bake 175–180°C / 345–350°F for ~30–40 min, until golden and a toothpick comes out clean.
Soak: while warm, poke holes; whisk sweetener + rum + orange juice until dissolved, then spoon over the cake to soak.
Glaze: mix sour cream + sweetener until smooth; spread over cooled cake. Finish with fresh orange zest.
