To operate your Cooking Performance Group combi oven, first set it to your desired temperature. The indicator light will illuminate during preheating and switch off once the oven has reached the set temperature. You can then adjust the 2-hour timer control by turning it clockwise to your desired time, or you can turn the timer counterclockwise until it reaches the ""hold"" position for continuous use.

Place the food trays in the oven cavity, ensuring they are not overcrowded by evenly distributing the trays with a maximum of 20 pounds per tray for best results. Once the oven is preheated, adjust the steam control to the desired level and use the indicator to know when water is flowing into the cooking chamber to generate steam. After cooking, turn all controls back to the ""0"" position and allow the oven to cool before cleaning it.
