Or, if you didn't, TL;DW:

Go to Settings / Controls / Keyboard & Mouse / Key Mapping / Combat, Lock-On and Interact / "Holster / Unholster Weapon (Tap)"

Either:

A) Reassign the default TAB key to a different key
OR
B) Assign a secondary key to holstering/unholstering.

Don't assign the holster key to one that is already using a separate action (such as bringing up the weapon wheel)

Unholster your gun, HOLD the holster key down for a bit, release, then TAP the holster key again quickly (HOLD (H) + TAP (H))

Alternatively, HOLD the holster key down a bit, release, then MASH the holster key once you've released it.
