These warm buttermilk biscuits served with herb butter are family favorite. I often serve them at dinner time along with soup but they also make a great brunch option.

MEK Homemade Buttermilk Biscuits

3 cups all-purpose flour

1 tbsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp sugar

10 tbsp cold butter

1 cup loosely pack cheddar cheese

1- 1 ¼ cups buttermilk

2 tbsp melted butter for brushing on top

Grease two trays and heat the oven to 400 F.

Sift together flour, baking powder, and baking soda. Add salt and sugar to it and whisk. Now add diced cold butter to it and rub the mixture with your fingers. You should see some big and some small pieces of butter in there.

Now add the shredded cheese to it and mix. Add buttermilk to the dry mix and mix well till you get a shaggy dough. Transfer to a floured surface and pat it flat. Now fold the edges towards the center and pat it flat again. Repeat the same process again.

You have to do this quickly so the butter won't melt in there. Spread the dough into ½ inch thickness and cut out your biscuits.

Gather the dough scraps and shape it again for more biscuits. Arrange your biscuits on the tray and brush the tops with some melted butter. Bake for 15 minutes or till light golden on the edges.

Take them out and brush with some more herb and garlic butter. Serve with soup or with a fruit preserve.
