Full Irish Breakfast Recipe
Boxty:
250g grated potato (squeezed dry)
250g mashed potato
½ cup flour
½ tsp salt
½ tsp baking powder
1 egg yolk
½ cup milk (add as needed)
Butter & oil for frying
1️⃣ Mix all ingredients into a thick batter.
2️⃣ Fry small scoops in butter & oil for 3-4 min per side until golden.

🥓 The Rest:

4 slices back bacon
6 sausages
2 slices black pudding
2 slices white pudding (optional)
2 eggs
1 tomato (halved)
1 cup mushrooms (sliced)
2 slices soda bread
1️⃣ Fry bacon, sausages, and puddings until crispy.
2️⃣ Sauté mushrooms in butter, then add tomatoes cut-side down.
3️⃣ Crack eggs into buttered pan and spoon hot butter over tops to baste.
4️⃣ Serve everything with toasted soda bread & a hot cup of tea or coffee.
