Ingredients:
2 tbsp oil
6-7 garlic cloves, chopped
1 egg
1 cup cooked rice
¼ cup spring onion whites
¼ cup carrots, chopped
¼ cup green onions
1 tsp vinegar
1 tsp soy sauce
½ tsp paprika
Salt and pepper to taste
Spring onion greens and fried garlic for garnish
Method:
1. Heat oil in a kadhai, sauté chopped garlic until golden brown, and set aside.
2. In the same kadhai, cook an egg, scramble it, and keep it aside.
3. Add spring onion whites, carrots, and green onions, and sauté for a minute.
4. Mix in cooked rice, egg, burnt garlic, salt, pepper, paprika, vinegar, and soy sauce.
5. Garnish with fried garlic and spring onion greens. Serve hot and enjoy.
