Ingredients:
1 Beef Tongue
1 tablespoon salt (for seasoning water)
5-6 bay leaves
1 cinnamon stick
Rinds from 1 tangerine
5 garlic cloves (squeezed for seasoning water)
1/2 tablespoon powdered onion
1/2 tablespoon ground black pepper
1 tablespoon rainbow peppercorns (crushed)
3 garlic cloves (for the seasoning paste)
1 teaspoon oil (for the seasoning paste)
1 tablespoon Dijon mustard (for the seasoning paste)
1 tablespoon powdered onion (for the seasoning paste)
Potatoes (for the side dish)
Salt (for the side dish)
Pepper (for the side dish)
Oil (for the side dish)
Instructions:
Unpack and Wash the Beef Tongue:

Unwrap the Beef Tongue and wash it thoroughly to remove any impurities. Clean it well and give it a fresh start!
Prepare the Seasoning Water:

In a large pan, bring water to a boil.
Add 1 tablespoon of salt, 5-6 bay leaves, 1 cinnamon stick, rinds from 1 tangerine, 5 squeezed garlic cloves, 1/2 tablespoon powdered onion, and 1/2 tablespoon ground black pepper.
Stir to combine and allow the water to boil with the seasoning.
Boil the Beef Tongue:

Add the Beef Tongue to the seasoned water and let it boil for about 3 hours until tender.
Remove the Skin:

After boiling for 3 hours, carefully peel off the skin from the Beef Tongue. The skin is not edible, so discard it, keeping the tender beef.
Prepare the Seasoning Paste:

In a small bowl, crush 1 tablespoon of rainbow peppercorns and add 3 garlic cloves to it.
Add 1 teaspoon of oil, 1 tablespoon Dijon mustard, and 1 tablespoon powdered onion. Mix everything well to form a paste.
