这款双层达兰糕(Kuih Talam)软糯香甜有弹性,通常是班兰口味的。今天分享的是椰糖口味的Kuih Talam,也可以用红糖代替椰糖。每一口都带有浓郁的椰奶香味,非常美味。

Today, I’m sharing a delicious recipe for Malacca Gula Melaka two layers kuih, also known as Gula Melaka Kuih Talam, a famous traditional Malaysian dessert.

This two-layer Kuih Talam is soft, sweet, and slightly chewy, typically made with pandan flavour. Today’s version is made with Gula Melaka (palm sugar), but you can also substitute it with brown sugar. Each bite is rich with the fragrant taste of coconut milk, making it incredibly tasty.

➡️ Ingredients 材料:
(Bottom Layer 底层)
80g Gula Melaka (Palm Sugar) 椰糖
200ml Water 清水
1 pcs Pandan leave 班兰叶
100ml Coconut milk 椰浆
60g Plain flour 普通面粉
25g Tapioca flour 木薯粉
1/4 tsp Alkaline water 碱水 (可以不放)

加了碱水,糕点会更有弹性
Adding alkaline water makes the kuih more elastic. (Optional)

(Top Layer 上层)
100ml Coconut Milk 椰浆
200ml Water 清水
60g Rice flour 粘米粉
1/2 tsp Salt 盐
10g Tapioca flour 木薯粉

碗仔粿
Rice Pudding

➡️ Ingredients 材料:
(Part A)
300ml Water 清水
150g Rice flour 粘米粉
20g Tapioca flour 木薯粉
1/2 tsp Salt 盐
2 tbsp Corn oil 玉米油
30g Pumpkin mash 金瓜泥

(Part B)
25g Wheat starch 澄粉
450ml Water 清水

Filling 馅料
16g Corn oil 玉米油
20g Garlic 蒜米
120g Sweet dried radish 甜菜脯碎
1 tsp Black soy sauce 黑浆油
Pinch of pepper powder 胡椒粉少许
1 tbsp Sugar 糖
100ml Water 清水
