Every summer, the farm gets loaded with many varieties of fruits. Lot of them are consumed and some of them are preserved for later use.
I discovered my love for fermentation recently. Though my love for fermentation is new, it has been one of the important methods of preserving food here, in the North-eastern parts of India.
Being the wettest region in the world, it is difficult to dry excess produce, so people prefer fermentation over drying or salting.
Fermented beans, fermented fish or even fermented bamboo shoots all are prime examples of the process.
Fermentation enhances nutrition and sensory value of the food and is very inexpensive technique.

In this video I am going to show you how to make vinegar, which is a two step fermentation process. In the first step, the sugar present in plum is converted to alcohol by yeast that is naturally present in the fruits.
In the second step a special king of bacteria takes over and feeds on the alcohol to produce vinegar.
