Wonton Soup with Trader Joe’s Chicken Cilantro Mini Wontons by Abbey’s Joy of Cooking
Ingredients:
15 pieces frozen Chicken Cilantro Mini Wontons, Trader Joe’s
1 pound Bok Choy or cabbage if bok choy is not available
3 cloves garlic, chopped
1 small onion, sliced
3 small carrots, sliced
2 stalks green onions (reserve 1 tablespoon for garnish)
1 tablespoon fresh ginger, sliced
1 tablespoon low sodium soy sauce
1 tablespoon + 1 teaspoon Minor’s chicken base
½ tablespoon + 1 teaspoon garlic salt
10 cups water
Black pepper to taste
¼ teaspoon Cayenne pepper (optional) or to taste
1 can whole young corn, drained
1 can sliced water chestnut, drained
2 tablespoons olive oil
Cilantro for garnish (optional)

Directions:

On medium heat, in a large pot, add olive oil. Sauté the onion and garlic for about 1 minute. Add the ginger, and sauté for about 1 minute. Pour 10 cups of water. Add soy sauce, chicken base, and garlic salt. Add cayenne pepper (optional) and ground black pepper. Cover, and bring it to a boil. Add carrots, young corn, and water chestnut. Taste the broth and see if you need to add more salt. Cover and simmer for about 5 minutes. Drop the frozen mini wontons one-by-one into the soup. After 1 minute, add the bok choy. Taste the broth again if you need to adjust the flavor to your liking. Turn off the heat. Serve immediately, top with chopped cilantro and green onion.
