We hope you enjoy this new series where we share with you our favourite lazy vegan meals. Perfect for when you're busy, tired, or just can't be bothered to cook. These meals are a great option instead of ordering takeout or buying a ready meal. They're simple, quick, and delicious!

RECIPES

Black Olive Tapenade Spaghetti
Serves - 2
Ingredients:
• 150g pasta
• 4 tbsp of black olive tapenade
• A small handful basil leaves
• 140g black Kalamata olives
• 1 large pinch of salt
• 1/2 tsp ground black pepper
• 1/2 a lemon, juiced
Optional Extras
• 1/2 tsp crushed chillies
• Extra tapenade
• Extra basil
• 20g toasted pine nuts

Harissa Roasted Squash & Butter Beans Flatbreads
Serves - 4 wraps
Ingredients:
• 400g butternut squash
• 1 can of butter beans (400g)
• 1 tbsp olive oil
• 2 tbsp harissa
• A large pinch of salt
• A small pinch of black pepper
• 4 flatbreads
• 2 tsps zaatar (1/2 tsp per flatbread)
• 1 tsp olive oil (1/2 tsp per flatbread)
• 2 heaped tsps of Oatly creme fraiche
• 4 large handful of watercress (1 per flatbread)
Optional
• Vegan feta
• Mint
• Lemon
