Channelling my inner Yotam Ottolenghi – maple-roasted sweet potato on a fluffy cloud of whipped tahini, topped with crispy spiced chickpeas and a shower of chopped pistachios. Serve as a substantial side or meat-free main, try stuffing it in flatbreads. Ridiculously good! - N x ❤️

Maple roast sweet potato salad - with whipped tahini and crispy chickpeas
MAPLE ROASTED SWEET POTATO WEDGES
1.5kg / 3 lb sweet potatoes, unpeeled, cut into wedges
1 tbsp maple syrup (or 2 1/2 tbsp honey)
1 1/2 tbsp olive oil
1/2 tsp cooking/kosher salt, 1/4 tsp pepper
CRISPY SEASONED CHICKPEAS
400g / 14 oz can chickpeas, drained
1 tbsp olive oil
1/2 tsp smoked paprika
1/4 tsp each garlic powder, onion powder, cooking/kosher salt, pepper
SPICY MAPLE SAUCE – mix:
3 tbsp maple syrup (or 2 tbsp honey), 1 tbsp sriracha, 1 tbsp extra virgin olive oil, 1/4 tsp cooking salt / kosher salt (halve for table salt), pinch pepper
WHIPPED TAHINI YOGURT SAUCE
1 1/4 cups plain yogurt, full fat
3 tbsp tahini
2 tbsp lemon juice
1 large garlic clove, finely grated
1 tbsp extra virgin olive oil
1/2 tsp cooking salt / kosher salt
GARNISHES - 2 tbsp finely chopped coriander / cilantro leaves (or parsley), 4 tbsp toasted pistachios, finely chopped
1. Toss potato with maple, oil, salt, and pepper, place on lined tray. Spread chickpeas on separate tray, no need to pat dry. Put in preheated 220°C/450°F (200°C fan).
2. Chickpeas – Take out after 10 min, toss with oil, spices, and return for 15 - 20 min until crispy.
3. Sweet potato - Roast 30 min in total or until soft, turning at halfway mark. For charring, put under oven grill/broiler set on high 3-5 min until charred, do not walk away, make sure paper does not catch on fire!!
4. Whipped tahini – whisk ingredients in heatproof bowl, microwave 30 sec, then whisk again until texture becomes like softly whipped cream. OPTIONAL - Take out 1/4 cup and loosen with water to drizzle-able consistency.
5. Assemble – spread whipped tahini on plate, pile on sweet potato, drizzle spicy maple sauce, tahini drizzle sauce (if using), most of pistachios and coriander, then chickpeas then remaining pistachios and coriander. Dig in!
(PS Great served warm or at room temp, excellent for preparing ahead)
