Dairy has been labeled as inflammatory and unhealthy for years — but is it true? Is milk bad for you? Does dairy cause inflammation or trigger autoimmune disease?
Most dairy sold in grocery stores has been so altered that it no longer resembles its natural state. Meanwhile, fermented raw dairy — like traditional yogurt, kefir, and cheese — has been nourishing cultures for thousands of years.
Ultra-pasteurization, homogenization, and ultra-processing have stripped modern milk of its enzymes and bioavailable nutrients, leading many to experience discomfort when consuming dairy and raising the question, “Is dairy inflammatory?”.
And “Are the vegan plant-based milk alternatives really better for you?”
Returning to the show is Dr. Bill Schindler, internationally known archaeologist, primitive technologist, and chef. He explores the role of technology in our ancestral dietary past by combining archaeological research with global ethnographic fieldwork.
Bill and his wife Christina operate the Modern Stone Age Kitchen, a restaurant designed to provide nourishing food created using ancestral approaches, maximizing safety, nutrient density, and bioavailability.
