Κριτσίνια, the Greek bread sticks kritsinia, with olive and tomatoes puree, fused within to make a super delicious crunchy and healthy snack, made from whole wheat flour, sesame and thyme.

The ingredients for our recipe are:
500 gr of whole wheat flour
500 gr of white flour
500 gr of tomatoes, chopped
200 gr of Greek olives
50 ml of water
50 ml of olive oil
10 gr of yeast
10 gr of sugar
50 gr of sesame
25 gr of thyme

Into a large bowl we add the tomatoes, the olives, the water and the olive oil and blend with our mixer, then we add the yeast and the sugar. Onto our liquid batter we slowly add the flour, and mix with a fork. We add the sesame and the thyme, we mix and knead very well, then set aside in a bowl with a clean film till the next day.

The next day, with a light touch of flour, (if needed) we rework the dough and make ready. We then work our dough, making thin long sticks and dip into a bowl with a small spoon of sugar, then sprinkle with the sesame seeds and the thyme, and place onto our baking tray.
We then bake into a preheated oven at 190C for 30 - 35 minutes, till crispy and crunchy. We remove and allow to completely cool down and enjoy with our dips, salads, or as a healthy snack throughout the day.
