These Korean inspired pork ribs with a gochujang sauce are full on addictive. Tender. Spicy. Sticky. Complex. This is everything I look for in a pork rib.

Ingredients:

2 racks pork back or spare ribs - silver skins removed and cut into individual ribs
2/3 cup (150ml) finely diced yellow onion (1/2 medium onion)
4 cloves garlic crushed
2 tbsp (30ml) coarse gochugaru - korean pepper flakes
4 tbsp (60ml) gochujang - korean chili paste
2 tbsp (30ml) shiro miso
1/4 cup (60ml) mirin
3-4 tbsp (45-60ml) apricot jam
2 tbsp (30ml) low sodium soy sauce
2 tsp (10ml) sesame oil
1 tbsp (15ml) vegetable oil plus enough to coat the ribs
1 1/2 (375ml) cups chicken stock
