Budget Gravel Bike/Cyclocross Bike Build from a Hybrid Bike

I've been wanting to build a swiss army knife of a bike for years now. A bike that has chunky tires but can go fast on the road. So I bought a Dawes Easy Street On/Off Road Hybrid bike for £40 and made it into a gravel bike / cyclocross bike / monstercross bike. This is the process of me building the bike on a budget.
