Cucumber & Red Onion Salad with Honey, Vinegar, and Celery

I love this salad during these warm summer months, it's simple, delicious and refreshing! It can be prepared several hours ahead and refrigerated; serve cold or at room temperature. It’s a crunchy and refreshing recipe, but to make a more substantial dish you can add shredded cooked chicken, tuna or even salami and ham, cut into julienne slices. I'll also show you how to make a wonderfully bright and tasty dressing of red wine vinegar, honey and olive oil. The Italians love their salads, and will often turn their salad into a meal course, especially in the summer, by adding some proteins - a great way to use leftover chicken or fish. Buon Gusto!
