Ingredients:
Meat: 500 grams (goat or lamb, cut into pieces)
Onions: 2 large, finely sliced
Tomatoes: 2 large, finely chopped
Ginger-Garlic Paste: 2 tablespoons
Yogurt: 1/2 cup
Green Chilies: 3-4, slit
Coriander Leaves: A handful, chopped (for garnish)
Cooking Oil/Ghee: 4 tablespoons
Spices:
Cumin Seeds: 1 teaspoon
Coriander Powder: 2 teaspoons
Turmeric Powder: 1/2 teaspoon
Red Chili Powder: 1 teaspoon (adjust to taste)
Garam Masala Powder: 1 teaspoon
Black Peppercorns: 8-10
Bay Leaf: 1
Cinnamon Stick: 1 small piece
Cardamom: 2-3
Cloves: 3-4
Salt: To taste
Instructions:
1. Heat Oil:
Heat oil in a deep pan or wok over medium heat. Add cumin seeds, bay leaf, cinnamon, cardamom, cloves, and peppercorns. Sauté until aromatic.
2. Cook Onions:
Add sliced onions and cook until golden brown.
3. Add Ginger-Garlic Paste:
Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.
4. Add Meat:
Add the meat pieces and sauté on high heat for 6-8 minutes until they are well-seared and coated with the spices.
5. Add Tomatoes and Spices:
Add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt. Mix well and cook until the tomatoes soften and release oil (around 10 minutes).
6. Add Yogurt:
Lower the heat and add the yogurt. Stir well to combine, and cook until the oil starts separating from the mixture.
7. Simmer the Meat:
Cover the pan, reduce heat, and let the meat cook in its juices for 30-40 minutes. Stir occasionally and add a splash of water if needed to prevent sticking.
8. Bhuna Process:
Once the meat is tender, increase the heat and bhuno (dry cook) the mixture by stirring constantly until the oil separates and the gravy thickens.
9. Add Garam Masala and Green Chilies:
Sprinkle garam masala and add green chilies. Stir for 2 minutes.
10. Garnish and Serve:
Garnish with chopped coriander leaves. Serve hot with naan, roti, or steamed rice.
