Happy Earth Month! Perhaps for Earth Day this year, you’ll consider exploring a new whole grain that is good for the environment.

In this video, I’ll show you How to Cook Millet. Technically millet is a seed, like quinoa, but both are classified as whole grains. Think of these two seeds like two fruits like cucumber and squash that are categorized as vegetables.

What You Need:
Fine mesh strainer
Pot with tight fitting lid
1 cup dry millet
2 cups water

Note: For millet, the ratio to millet to water is 1:2, which yields 3 cups of cooked millet.

Directions:
1. Bring pot of water to a boil.
2. Rinse the millet with the strainer
3. Add millet to boiling water
4. Wait for it to boil/simmer, then cover for 20 minutes
5. Fluff with a fork, cover, remove from heat and let sit for 10 minutes.
6. Serve warm.

Cooking millet this way can offer a more nutritious alternative to brown rice or couscous. Also, you can add more water if you’d like the millet to be more like polenta. We’ll explore that in a future video.
