Papitas - A Classic New Mexican Side Dish

Hey Chile-Heads! Today, we'll be making a classic New Mexican side dish: papitas. I don't know about you all, but I had no idea how to make papitas when I first started cooking. This video will show you how to easily make cook up some delicious potatoes in 15 - 20 minutes. They are easy enough to make and partner with your huevos rancheros for a weekend brunch meal, or with enchiladas for dinner. You're gonna love this recipe!

PAPITAS

Ingredients:
2 medium to large russet potatoes
2 tablespoons canola oil
½-teaspoon salt
1/8 teaspoon onion powder
1/8 teaspoon pepper

Directions:

Peel potatoes and dice into ¼-inch cubes. Add canola oil to a medium sauté pan and heat on medium to high heat. Add diced potatoes, onion powder, salt and pepper. Stir so that the oil coats all of the potatoes and cook for about 1 minute. Now turn the heat to low, cover with a lid and cook for about two minutes. Remove the lid and stir potatoes, then replace the lid and cook for another 2 minutes, or until potatoes are crisp and soft.
