Potato & Bacon Soup With Cheesy Toast

Soup.
1 tbsp olive oil
6 slices of bacon
1 onion diced
3 garlic cloves minced
Salt & pepper to taste
4 large potatoes or 6 medium
4 cups chicken broth
1 tsp ground thyme
1 tsp smoked paprika
1 cup heavy whipping cream
1/2 cup cheddar cheese

Garnish
Crumbled Bacon
Fresh parsley or green onions

Cheese Toast

4 slices bread
Butter
Mozzarella cheese or cheese if your choice.
