Simple Boxty Recipe
Ingredients:

250g grated potato (squeezed dry)
250g mashed potato
½ cup flour
½ tsp salt
½ tsp baking powder
1 egg yolk
½ cup milk (add as needed)
Butter & oil for frying
(Optional: ½ cup grated Irish cheddar for extra richness)
Instructions:

Mix grated & mashed potatoes with flour, salt, baking powder, and egg yolk.
Add milk slowly, stirring until you get a thick batter.
Heat a pan over medium heat, add butter & oil, and drop in small scoops of batter.
Flatten slightly and cook for 3-4 minutes per side until golden brown and crispy.
Serve with butter, sour cream, or alongside a Full Irish Breakfast.
