I love the casserole version of mac and cheese but nothing reminds me of my childhood more than the good ole stove type style. Creamy cheese sauce over noodles and not a concern in the world about my cholesterol. Ah the good ole days! Grocery List:

1lb Elbow macaroni
1 tbsp butter, unsalted
1/2lb Andouille sausage
1/2 White onion, diced
1 Celery stalk, DICED
1/2 Red bell pepper, diced
2-3 Garlic cloves, minced
1/4 cup Tomato sauce
1/2 cup Diced tomatoes (Fire Roasted if available)
3/4 cup Chicken stock
1 tbsp Cajun seasoning
1/2 tsp Smoked Paprika
2-3 dashes Worcestershire sauce

Cheese Sauce:
8oz Pepper jack cheese, grated
1 tbsp Cornstarch
12oz Evaporated milk
1/2 tsp Mustard powder
1 tsp Cajun seasoning
1 tsp Hot sauce

4oz Sharp cheddar cheese, shredded
1/4 cup Heavy whipping cream
1/2 cup Green onions, diced
Parmesan, grated
Bacon, crumbled
